Although it sounds daunting, homemade sausage rolls are very simple to make! They take about as long to prepare as it takes the oven to heat up. I looked up a few recipes online and came up with my own version, making use of any herbs and spices I had in my own cupboard.
Ingredients:
300g sausage meat (or 4 sausages with skin taken off)
4 sprigs of thyme (finely chopped)
1 tbsp Chilli chutney
1 tsp Worchester sauce
½ roll of puff pastry
1 egg
Method:
Preheat oven to 190c. If using sausages, cut the skin off them and use the meat inside. Place in a bowl and combine with the thyme, chutney and Worchester sauce. Season generously with salt and pepper.
Roll out puff pasty to the thickness of a 50p coin. Form a long rectangle with the sausage and place to one side of the puff pastry leaving about a 1cm border around it. Egg wash the border and fold over the other half off the puff pastry. Egg wash the top and sprinkle over some seeds – I used sesame. Place in oven and cook for about 20-25 minutes until the puff pastry is golden brown and the sausage meat is cooked through.
Once out of the oven cut up into the desirable size and serve with HP sauce if you so wish!
