Coconut oil cookies

Ever since my trip to the Chinese wholesaler to get coconut cream, I have gone a bit coconut mad and bought a lot of coconut flavoured food items. One of these was coconut oil. Coconut oil is an interesting ingredient and one I do not have much experience with but I decided I would see what all the hype was about. It sat in my cupboard for weeks because I was unsure how to use it. I looked up some recipes online and decided to make these cookies. This recipe is super easy and can be made in about 10 minutes.

Recipe
Yield: 20 cookies
1 2/3 cup all purpose flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp nutmeg
1/2 cup coconut oil
1/2 cup granulated sugar
1/3 cup dark brown sugar
1 tsp vanilla extract
2 eggs
3/4 cup of peanut butter (creamy or crunchy)
Method
Preheat the oven to 180 c
Cream the coconut oil, peanut butter and sugars together until smooth. Then add in the eggs and vanilla. Then finally add in the flour, nutmeg, salt and baking powder. Beat together until a dough forms. Form the cookies with an ice cream scoop and set on a lined baking sheet. Press each cookie down with a fork and bake in the oven for 10 -12 minutes. They will feel very soft when they come out but leave them to cool o the trays and they will firm up.
