Banana Pancakes

If regular pancakes are too caloric and unhealthy for you, then this is the perfect alternative! They are extremely fluffy and taste like regular pancakes! These were a God send during exam season as it gave something to look forward to on my lunch break. I found this recipe of Pinterest from a blog called "The Wholesome Fork"

Ingredients
1 medium ripe banana (the riper the better - it will make pancakes sweeter)
2 eggs
1/3 cup of rolled oats
1/4 tsp cinnamon
1 tsp matcha powder (optional)
Method
Heat a pan or a griddle to a medium heat
Blend all the ingredients until smooth
Melt some butter onto the griddle so the pancakes do not stick.
Place dollops of the mixture onto the griddle and cook until both sides of the pancake are a golden colour. Be careful when flipping the pancakes, they are very fragile!
Serve with greek yoghurt, berries and a drizzle of maple syrup. (unfortunately on the day I made these, we only had maple syrup...I was so disappointed!)
