Cranberry, brie and Pistachio Puff Pastry

It has been a while since I have uploaded a recipe on here, so I thought I would share with you the starter I made for Christmas dinner. Although it is shaped in a wreath and has Christmas flavours, I would eat this at any time of the year (Partly because I love Christmas!) It is super easy to make, with minimal prep work! The best part is the oozy cheese! This recipe came from Simply Delicious.

Recipe
Ingredients:
1 sheet of puff pastry (I got a pre made one from the supermarket)
2-3 tbsp cranberry sauce
200 g brie sliced
2 tbsp pistachios chopped
1 egg beaten
Method:
Preheat the oven to 200 C and lay out the puff pastry on top of a lined baking tray. Score a circle in the middle with a plate or a bowl to create an inner circle. And then cut triangles out of the inner circle (8 triangles in total). Spread the cranberry sauce around the outer circle (leaving about a 1 cm border), followed by the brie and a sprinkling of pistachios.

The next step is to fold in the border of the outer circle and fold over the corresponding triangle to hold it secure. Egg wash the wreath and place into the oven for 15 minutes or until pastry is golden brown and cooked through. Remove from the oven and allow to rest for 5 minutes.
