Irish Apple Crumble Cake

With winter approaching, I think it's about time that I posted an autumnal recipe! This cake is pure comfort food and is best served straight out of the oven on a cold day. It's only fitting that this recipe comes from Donal Skehan (he's Irish for those who don't know).

Irish Apple Crumble Cake Recipe

Ingredients

110 g butter

150 g soft light brown sugar

2 eggs

210 g plain flour

1tsp baking powder

Pinch of salt

1tsp ground cinnamon

300g cooking apples (peeled, cored and cut into cubes)

Crumble topping

50 g sugar

50 g plain flour

50 g butter

Method

Preheat the oven to 180 Celsius. Start off by creaming together the butter and sugar until light and fluffy, it should be a shade paler in colour. Then add an egg in one at a time and beat in between. This is an important step to avoid the mixture from curdling, however do not worry if your mixture does curdle - once the flour is added this problem will disappear. Next sift the flour, baking powder, salt and ground cinnamon into the bowl and combine with the butter mixture. The mixture should be smooth and lump free.

After doing this add in the cooking apples and make sure the apples are well distributed in the mixture.

Once the mixture is done, transfer it to a 20cm loose form cake tin that has been lined with baking paper. Smooth it out as best you can. Meanwhile, make the crumble part of the cake. This is easily achieved by creaming together the butter and sugar and adding in the flour. Sprinkle this over the top of the cake and put in the oven. Cook for 40-45 minutes or until a skewer inserted in the middle comes out clean.

Serve with custard and ice cream. As you can see from the photo, my custard is very runny! It just wouldn't thicken, but it still tasted good.
