Cowboy Cookies

One Christmas, I received a food gift which was a jar filled with all the dry ingredients necessary to make cowboy coookies. The jar was nicely decorated and had a card instructing what else needed to be added to the ingredients and how long to bake the cookies for. It looked like something that had come off of Pintrest. We made the cookies and they were delicious but unfortunately, we misplaced the recipe card and ever since have been looking for the perfect cookie recipe. This is our personal favourite (it came from AllRecipes), and when baked just right the edges are crunchy and the middle is soft and chewy.

Cowboy Cookies Recipe

Ingredients

  • 2 cups plain flour

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1 cup butter

  • 1 cup caster sugar

  • 1 cup brown sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • 2 cups rolled oats

  • 1 cup chocolate chips

Method

Preheat the oven to 175 C and cream together the butter, brown sugar and caster sugar until pale and fluffy. Then add in the eggs one at a time until everything is well incorporated. Add the vanilla extract, flour, baking powder and salt and beat until smooth.

Pour in the rolled oats and make sure that all the ingredients have been evenly dispersed. The consistency of the mixture should be similar to a soft dough.

Line 2 large baking trays with baking parchment and spoon out about a tbsp for each cookie. I used a 4 cm release ice cream scoop to make my life easier and so that all of my cookies were uniform in size. I then flattened them out with the back of a spoon.

Bake the cookies for 8 - 10 minutes, take them out before they go very golden brown because they will continue to cook on the baking tray as they are cooling. I kept mine in a minute too long this time and they were quite crunchy. Serve with a glass of milk and enjoy!
