Soft Tacos

Last year, when I visited the west coast of America, one of the things I was most looking forward to was trying authentic Mexican food. When we were in San Diego, my family and I came across this restaurant that had been getting good reviews on tripadvisor and we ended up going. The food was very good, however I did not feel very well after I had eaten it and that is why I now make my own tamer Mexican food at home. These tortillas are so good you will never want to buy ready made ones from the supermarket ever again! This recipe came from a blog called "The Cafe Sucre Farine"

Tortilla Recipe

Ingredients

  • 3 cups plain flour

  • 1 tsp salt

  • 1 tsp baking powder

  • 1/3 cup vegetable oil

  • 1 cup warm water

Method

In the bowl of a stand mixer whisk together the flour, salt and baking powder until well combined. Create a well in the centre and add in the oil and water. Mix until a dough forms.

Now, knead on a medium high speed with the dough hook until the dough becomes soft and elastic.

To make each tortilla, weigh the ball of dough and divide the number by 16. This will give you more even and equal tortillas. Once you have 16 dough balls set aside to rest for 15 minutes.

After the tortillas have rested, heat a large pan to a medium high heat and start rolling out each ball of dough into a large pancake which is translucent.

Once the tortillas have been rolled out, set one tortilla at a time on the frying pan and cook until bubbly and lightly toasted.

To keep the tortillas warm, put a tea towel over a plate and set the tortillas on top of the tea towel. Serve the tortillas with the toppings of your choice. I topped mine with spiced beef, salsa, creme fraiche, salad, cheese and corn. These tortillas are also very versatile, you can even use the leftovers (if there are any) as pizza bases.
