Cinnamon Roll Cake

I have made cinnamon roll pancakes, so it is about time I shared with you the cinnamon roll cake. I got this recipe from an American friend (thanks Michelle!) and this cake is to die for. If you love cinnamon rolls, you will love this cake.

Cinnamon Roll cake recipe
Ingredients
1 cup softened butter
2 cups sugar
2 eggs
2 cups milk
1 tsp vinegar
4 cups plain flour
2 tsp baking soda
Cinnamon topping
2/3 cup sugar
2 tsp cinnamon
Method
Preheat the oven to 200 C and cream the butter and sugar together until pale and fluffy. Add in the eggs one at a time making sure all the ingredients are well incorporated.

Next, combine the milk and vinegar and add into the mixture gradually. Then add in the flour and baking soda. Make sure the mixture is lump free.

Transfer half of the mixture into two large loaf pans (1/4 of the mixture for each loaf pan) and smooth the top. Next add in 1/4 of the sugar cinnamon mixture to each loaf pan.

Then add the rest of the cake mixture into each loaf tin and top with the remaining cinnamon sugar.

Now, take a knife and swirl the cinnamon sugar and cake mixture together to create a marbled effect. Do not be afraid to get in there and swirl it - it is important that you do so that it has a swirly effect in each slice.

Bake in the oven for 45-50 minutes, you may want to cover the loaves in tinfoil, halfway through so that the tops do not burn. The cake is done once a skewer comes out clean. Leave to cool slightly in its pan and then transfer to a cooling rack to cool completely.
Then share, eat and enjoy! There will be no leftovers with this cake. I took two of them to share with a group of girls/women in my church and I came home with just crumbs in the box! It is always a great way to test out recipes - there is no shortage of volunteer tasters.
