Vegan Banana Bread

As I have this new friend who cannot eat dairy, I have had to try new recipes without dairy products. This banana bread loaf happens to be vegan and it is super easy to whip together and you wouldn’t know it was vegan unless I told you. This is an adapted recipe from BBC Good Food.

Vegan Banana Bread Recipe

Ingredients

  • 225 g plain flour

  • 3 heaped tsp baking powder

  • 100 g brown sugar

  • 3 tsp cinnamon (or mixed spice)

  • 3 large black bananas

  • 75 g (weight) vegetable oil or sunflower oil (I use sunflower)

  • 2 tsp sugar

Crunchy topping:

  • 2 tsp sugar

  • 2 tsp brown sugar

  • 2 tsp ground almonds

  • 2 tsp desiccated coconut

Method

Preheat the oven to 180 C. Peel the bananas and place in the blender with the oil. I prefer to blend my bananas so the bread is nice and smooth, but you can mash your bananas and then add it to the oil.

Measure out the dry ingredients and place in a bowl, then add these to the banana mixture. Mix until all ingredients are well combined.

Transfer the mixture into a large loaf tin lined with baking paper. Smooth down the mixture to make sure the top is level.

Now it is time to make the crispy topping. Mix the sugars, coconut and almond together in a bowl and sprinkle generously over the top of the banana bread. Place the loaf tin in the oven and bake for about 45 minutes (or until a skewer inserted into the middle comes out clean).

Once baked, set aside to cool and enjoy!
