These are my take on Buzzfeed’s truffle video. They are awesome if you want something really easy to make which will have people thinking you slaved in the kitchen for hours. This literally takes 20 minutes to complete – dipping them into the chocolate was the most tedious part!

Truffles
Ingredients
1 packet of your preferred biscuits (this time I used cheap chocolate chip cookies)
Cream cheese (I use Philadelphia)
Method
Empty your packet of biscuits into a food processor and grind to a thin powder. If you do not own a food processor, you can insert the biscuits into a zip lock bag and bash them with a rolling pin. This is also a good way to release anger or stress!

Unfortunately I do not have a measurement for how much cream cheese I used. It depends on the biscuits you have, cookies tend to be quite dry so I add quite a lot of cream cheese to them in order to obtain the right consistency. If you decide to use something that has a filling e.g. Oreo cookies, then you will need much less cream cheese. The mixture should come together into a “dough” and you should be able to make little balls out of the mixture without it crumbling. However, if this doesn’t happen, keep adding more cream cheese.

Next take your “dough” and roll it into balls that are about the size of a ferrero rocher. Then set onto a baking tray and leave to firm in the fridge.

Meanwhile, melt the chocolate in a bain marie. Lift the truffles out of the fridge and coat each one with chocolate. I usually drop one in the chocolate and drag it around with a fork. Place each truffle onto a lined cooling sheet.

As you can see, the truffle are no where near perfectly coated but I have a solution! You can dip them into chopped up nuts, dessicated coconut or another topping of your choice. This time around I decided to pipe some white chocolate on the top, for a classy finish.

These truffles would make the perfect food gift or are great for giving into a chocolate craving without spending a lot of money!
