Cinnamon Pancakes

Happy pancake Tuesday!!! I decided to share with you this awesome recipe because it combines two of my favourite things: cinnamon rolls and pancakes! What more could you want??? I first tried this recipe a few years ago on pancake Tuesday and everybody loved it. Cinnamon Pancakes
Ingredients:
75 g salted butter
75 g dark brown sugar
1 tsp ground cinnamon
150 g self-raising flour
1 tsp baking powder
2 eggs
150 ml buttermilk
1 pinch salt
Method:
Cream together the butter, dark brown sugar and the cinnamon until smooth and creamy. Then transfer this mixture to a piping bag and leave to the side until needed.

Now it is time to make the pancake batter. This takes at the most 5 minutes, it’s a really easy mix. Dump the flour, baking powder, salt, milk and eggs into a bowl and whisk until smooth and lump free.

Heat up a frying pan or an electric griddle (if, like me, you have one). Put a little bit of butter on the pan and spread it around. Then spoon a few pancakes onto the pan. Now it is time to get the butter, cinnamon and sugar mixture and pipe a swirl on top of the pancake. Do not flip the pancake over until the top is nearly cooked. It is normal that when the pancake is flipped swirl side down that a lot of “syrup” will bubble around it. Do not worry, just clean the pan between batches. My swirls are not the neatest but it is a pancake and it does not have to be perfect!

Eat and enjoy with maple syrup, if you wish!
