Ultimate Turkey Sandwich

Is it just me or is anyone else absolutely scunnered with ham and cheese sandwiches? Sometimes its unavoidable, but when you do have more time to spend on making a sandwich, you have to try this amazing turkey sandwich! I took this recipe from everyday food. Everyday food is a YouTube channel I only recently stumbled upon. All of their recipes look really good and reasonably quick to achieve. If there is one thing I have learnt about cooking this week, it is that timing and prep work are key. No matter how long things are in the oven you should always use that precious time to do something and not stand about the kitchen doing nothing (like I did last Saturday). The source of all my troubles began when I decided to make some wedges to accompany my sandwich. The wedges needed about 35 mins in the oven and that seemed like a really long time to have things sitting ready to assemble. Therefore I stupidly decided that I should wait until the very last minute to do my prep work. Long story short, I just about got everything on the plate before it got cold.

Turkey Sandwich

Ingredients:

Sandwich (makes 1 sandwich):

  • 1 granny smith apple (sliced thinly)

  • 2 slices of brown bread (lightly toasted)

  • 4 slices of cheddar cheese

  • 1 leaf of lettuce

  • Hummus

  • Wholegrain mustard

  • 3 or 4 slices of turkey breast (I used the dark meat left over from Christmas, still in freezer)

Wedges:

  • 3 or 4 large potatoes (cut into wedges)

  • 4 tbsp sunflower oil

  • 2 tsp salt

  • 2 tsp garlic powder

  • 2 tsp dried oregano

  • 1/2 cup of grated Parmesan

Dip:

  • 150g creme fraiche

  • zest of 1 lime

  • small handful of parsley

Method:

Preheat the oven to 220C and then wash, peel and slice and wedge the potatoes. Transfer the wedged potatoes to a large bowl and add the oil. Make sure all wedges have been covered with oil. It is important that sunflower oil is used as it reaches a higher temperature than olive oil and therefore makes the wedges crispier. Then measure out all the herbs and seasonings and add them to the potatoes. Grate the Parmesan and incorporate this with the rest of the ingredients. All potatoes must have an even coating before being laid on a baking tray lined with grease proof paper. Cook the wedges for 20 – 30 minutes until they are crispy and a golden brown colour.

Meanwhile make your dip by mixing the creme fraiche with the zested lime and the finely chopped parsley. The dip is optional, I was just bored waiting for the wedges to cook so I made some. Proceed by prepping your ingredients. Slice the apples finely into roughly 1/2 cm thickness. Next slice your cheese, I have one of those fancy cheese slicers at home, which made my job much easier. Make sure that the lettuce is washed and completely dry before putting it in the sandwich. I also decided to heat my turkey so that it wasn’t ice cold when I bit into it. There is nothing worse than a soggy sandwich! Leave the toasting of the bread until last as you want it to still be slightly warm when you bite into it.

There is no proper way to assemble a sandwich however, I started off by spreading a generous amount of wholegrain mustard on one of the slices and then hummus (I used my mum’s hummus, it is the best!) on the other. Then on one side I piled the cheese, lettuce and apple and on the other I placed a large handful of turkey. If you want you can also put a dollop of cranberry sauce on the top as turkey and cranberry sauce are a perfect match. I did attempt to close the sandwich, but that did not work out too well as the sandwich is pretty jam packed.

I have to admit this was a really awesome sandwich, all of the ingredients compliment each other and I especially liked the tang of the granny smith apple. The wedges were also extremely good with all that lovely Parmesan cheese on them. All in all it was quite a hit in my house however, if I was to do it different next time I would add more hummus to make the sandwich a little less dry.
